Crispy Soba Noodle Salad

The sesame dressing is the key to this wonderful dish.

Ingredients

Soba noodles 1 bunch
Radish sprouts 1/2 pack
Tomato 1
Cucumber 1/4
Spring onions 3
Avocado 1
Lemon juice as required
[Sesame dressing]
Dashi broth 90ml
Soy sauce 3 tbsp
Mirin 3 tbsp
Sugar 1 tsp
Mayonnaise 2 tbsp
Tahini 2 tbsp
Crushed sesame seeds 2 tsp
Cayenne pepper as required

Method

Add the sugar to the soy sauce and mirin and mix well to dissolve. Add the mayonnaise, Tahini and crushed sesame seeds and mix well.

Add the dashi broth a bit at a time and season to taste. Finally, add the cayenne pepper if you like - the dressing is now ready.

Pull apart the radish sprouts and deseed the cucumber before slicing into strips.

Slice the avocado (drizzle with lemon juice), spring onions and tomato.

Cook the soba noodles and wash under cold running water. Drain well.

Put the noodles in a dish and decorate with Steps 3 & 4 and pour over the dressing from Step 2.

Tips & Note

●The dressing can be adjusted with the dashi broth to get your perfect consistency.
