Ingredients

Aubergine (medium) 1
Garlic 1 clove
Spinach 80g
Pancetta 50g
Olive oil 3 tbsp
Whole cumin 1 tsp
Coriander powder 1/2 tsp
Crushed chilli as required
Lemon juice 1-2 tbsp
Salt & pepper as required

Method

Chop the aubergine into bitesize pieces and stir fry with the pancetta in the olive oil for 5 minutes.

Add the finely sliced garlic, chilli, cumin and coriander.

Add the lemon juice and spinach. When the spinach is wilted, add the salt & pepper and adjust for seasoning.
