Spinach With Creamy Taro Potato

Ingredients

Spinach 1/2 packet (150g)
Taro potato (or yam) 6
Chicken stock 200ml
Double cream 3 tbsp
Sake (or white wine) 1 tbsp
Grated ginger 2 tsp
Sea salt as required
Black pepper as required

Method

Peel the taro potato and boil. Chop into bitesize pieces.

Boil the spinach in salted hot water. Soak in cold water then drain.

Add the chicken stock, sake, grated ginger and taro pieces in a pan.

Cook until the taro is softened, then add the double cream and simmer until it thickens. Season with salt & pepper.

Finally, add the spinach and cook it together, it's now ready to serve.
