Turkey in Miso Butter Sauce

A lovely buttery sauce gives this dish taste and moisture.

Ingredients

Turkey breast fillet 300g
Carrot 4cm
Leek 1
Butter 1 tbsp
Olive oil as required
Miso butter sauce:
Butter 1 tsp
Miso (white) 2-3 tbsp
Mirin 1 tsp
Soy sauce 1 tsp
Sake or white wine 3 tbsp

Method

Peel the carrot and cut into flat batons. Cut the leek into 4cm pieces and cook both for 3 minutes in a microwave.

Transfer to kitchen paper and allow to cool.

Remove the centre core of the leek and insert a carrot baton.

Lightly season the turkey with salt & pepper and cut to large chunks.

Put the butter and olive oil in a frying pan and fry the turkey until nicely browned on both sides.

Add the leeks from Step 3 to the pan and stir occasionally to brown all over.

Put all the miso butter sauce ingredients (except the butter) in a small pan and heat to reduce until thick. Add the butter and stir in.

Transfer the turkey to a serving dish and pour over the miso butter sauce.

Tips & Note

●Once you add the turkey to the pan, fry it as gently as possible without moving it too much
