Steamed Turkey Dumplings

Ingredients

Turkey mince 250g
Salt & pepper as required
Sake 1 tbsp
Tofu 150g
Egg 1/2
Ginger 1/2 tbsp
Spinach as required
Bok choy as required
Mushrooms (shimeji, enoki or ordinary) as required

Method

Make the turkey dumplings: put the turkey, salt & pepper, sake, tofu, grated ginger and egg in a bowl and mix well.

Place the spinach and bok choy into a bamboo steamer and scatter the sliced mushrooms.

Scoop a spoonful of the mixture from Step 1 to make quenelles and place on top of the vegetables. Steam for 10 minutes.

Tips & Note

You can serve with any sauce you like. If you prefer a hot one, mix soy sauce with chilli oil, or just use ponzu vinegar.
