Roast Onion Salad

Taste the sweetness of the onions! Ideal to clear out any leftover onions.

Ingredients

Onions (large) 2
White wine vinegar 2 tbsp
Extra virgin olive oil 1 tbsp
Salt as required
Goji berries as required
Salad cress as required

Method

Put the onions on a baking tray (skin on) and roast for 1 hour 15-30 minutes on 180C.

Remove from the oven and allow to cool. Peel and loosen some of the layers and chop into wedges. Put in a bowl.

Add the white wine vinegar, olive oil and goji berries and mix well.

Transfer to a serving dish and adjust for seasoning. Garnish with the cress.

This is the cress, available at all supermarkets.

Tips & Note

●At Step 1, just simply roast until the onions become very soft and the moisture starts to caramelise.
●You can marinade at Step 3 for as long as you can.
