Smoked Mackerel Potage

The sweetness of the sweet potato really elevates the mackerel flavour. A great soup for kids too.

Ingredients

Smoked mackerel 60g
Olive oil as required
Onion 1
Sweet potato 300-350g
Stock to cover
Salt & pepper as required
Thyme as required

Method

Remove the skin from the mackerel and flake. Thinly slice the onion and sweet potato with skin on.

Put the olive oil into a deep pan and fry the onions first on medium heat.

When softened, add the sweet potato and stock and simmer until soft.

Add the smoked mackerel and blend to a soup using a hand mixer.

Season with salt & pepper and transfer to a serving bowl. Garnish with thyme.

Tips & Note

●If you use the sweet potato straight after cutting, you don't have to soak it. The starch from the potato will thicken the soup.
●The stock I used this time was Kallo organic chicken stock.
