Creamy Fennel Soup

It's a beautiful pale green and tastes lovely and creamy.

Ingredients

Butter as required
Fennel bulb 1
Onion 1/2
Stock 600ml
Milk 200ml
Double cream 100ml
Salt & pepper as required
Fennel fronds for garnish as required

Method

Heat the butter in a pan.

Add the thinly sliced fennel and onion. Season with a bit of salt. Put the lid on and fry slowly on low heat until softened.

Add the stock and simmer until nice and soft. Add the milk.

With a hand blender, make a puree of Step 3. Add the double cream, salt & pepper.

Blend again to a smooth creamy finish.

Tips & Note

●You could add one small potato to give it more creaminess but you'd lose the lovely fennel flavour.
●Put the lid on at Step 2 - this will get a good concentrated flavour in the steam without burning the vegetables.
