Oyster Sauce Dipped Tempura Egg

The longer you leave the egg in oyster sauce, the tastier this dish.

Ingredients

Boiled eggs 4
Oyster sauce 2 tbsp
Sake 1 tbsp
Soy sauce 1.5 tbsp
Flour (for dredging) as required
【Batter】
Flour 2 tbsp
Water 4 tbsp
Salt a little
Vegetable oil (for frying) as required

Method

Peel the boiled eggs and soak into a marinade of oyster sauce, sake and light soy sauce overnight in the fridge.

Pat the eggs dry and cut into half lengthways. Dredge with the flour.

Mix the batter and run the floured eggs through it and straight into the oil 180C. Deep fry until the batter is crisp and golden.

Tips & Note

Make the eggs hard boiled.
It doesn't really matter to have the yolk right in the middle.
