Cheese & Bacon In a Turkey Roll

This is like a Saltimbocca, with melting cheese.

Ingredients

Turkey breast fillets 3
Fresh sage or basil leaves 6
Bacon rashers 3
Hard cheese (such as Mimolette or Parmigiano reggiano) as required
Flour as required
Olive oil 2 tbsp
White wine 1/2 cup
Salt & pepper as required

Method

Cut the bacon rashers into half. Cut thin slices off the cheese using a peeler.

Use a tenderiser to make the turkey fillets thin, then cut into half.

Lightly season the turkey, then lay a leaf of sage and some bacon on top. Roll up and secure with a cocktail stick.

Dredge with the flour. Put the olive oil in a frying pan and add the turkey rolls, seam side down.

Fry for 10 minutes, turning until evenly golden. Add the white wine and put the lid on. Steam cook for 2-3 minutes.

Remove the cocktail stick and arrange on a serving dish.

Tips & Note

● If you don't like sage, you can use more basil.
● You could add more sage with the white wine at Step 6 if you like.
