Sauteed Lamb's Liver & New Potatoes

Ingredients

Lamb's liver 100g
New potatoes 200g
Bacon rashers 2
Spring onions 2
Garlic (grated) 1 clove
Cayenne pepper 1/3 tsp
Salt & pepper as required
Sour cream or greek yogurt as required

Method

Wash the liver under running water, remove any excess skin. Soak in water for 20 minutes, changing the water a couple of times.

Chop the new potatoes into bitesize pieces and boil in salted water for 12-15 minutes. Diagonally slice the spring onions.

Fry the cooked potatoes in olive oil, remove when golden brown.

Pat dry the liver and rub in cayenne pepper, grated garlic and salt & pepper. Dredge with flour.

In a separate frying pan, fry the chopped bacon and add Step 4 and fry for a further 2-3 minutes.

Add the fried potatoes and spring onions and fry for a further 2-3 minutes. It's ready to serve!

Tips & Note

●You can add sour cream for a real decadent finish, or greek yogurt for a lighter dish. You can also garnish with watercress if you like.
