Aubergine Garlic Toast

Ingredients

Aubergine 1
Garlic 1 clove
Garlic powder 1/2 tsp
Italian parsley 10g
Flour as required
Egg white as required
Breadcrumbs as required

Method

Peel the skin off the aubergine and thinly slice it. Soak in salted water for 10 minutes. Preheat the oven 180C and finely chop the parsley.

Pat dry the aubergine and spread with the finely grated garlic using the back of a spoon.

Fry the breadcrumbs in olive oil and add the garlic powder and chopped parsley.

Dredge Step 2 with flour, dip in the egg white and coat with the breadcrumb mix. Put in the oven for 5-10 minutes, it's ready when it's nice and golden.
