Savoury Mushrooms on Yam Steaks

A really hearty and warming starter.

Ingredients

Yam 300g
Brown mushrooms 150g
Butter 15g
Soy sauce 2 tbsp
Mirin 1.5 tbsp
Cayenne pepper as required
Spring onions (green part) as required
Salt & pepper as required

Method

Peel the yam and slice into 1cm rounds and season with salt & pepper.

Roughly chop the spring onion greens. Clean the mushrooms with kitchen paper and slice.

Put the butter in a hot frying pan and fry the yam for 7-10 minutes on low heat.

When both sides are browned, remove to an oven dish and put into a preheated oven 180C for 5 minutes.

Add the mushrooms to the frying pan with the soy sauce and mirin and fry on high heat.

Arrange the mushrooms on the yam slices on a serving dish. Garnish with the spring onions and cayenne pepper.

Tips & Note

●The yam will become firmer when it cools, so eat while it's hot.
