Hot & Spicy Cod & New Potato Stir Fry

Ingredients

New potatoes 12
Cod fillet 1
Potato starch or cornflour as required
Salt & pepper as required
Spring onions 5
Green pepper 1/2
Garlic 1 clove
Sauce:
Gochujang 2 tbsp
Miso 1 tbsp
Soy sauce 2 tbsp
Sake 2 tbsp
Vegetable oil for frying as required

Method

Boil the potatoes until just cooked. Cut the cod into bitesize pieces. Finely slice the green pepper and cut the spring onions into quarters. Finely chop the garlic.

Put the oil in a frying pan and fry the potatoes until golden. Remove to a plate.

Add the salt & pepper into the potato starch and dredge the cod pieces in it. Remove any excess.

Put some oil in the same frying pan and add the cod. Lightly fry to brown.

Add the potatoes from Step 2, most of the spring onions, green peppers and garlic and stir fry.

Mix all the sauce ingredients together in a bowl and add to Step 5. Stir fry well to incorporate.

Transfer to a serving dish and sprinkle with the remaining spring onions (finely chopped) before serving.

This is the Gochujang Korean spicy miso I used.

Tips & Note

●If you don't have any gochujang, you can Chinese chilli bean sauce or add some chilli flakes to miso.
