Chinese Stir Fried Pork & Vegetable Pancakes

Ingredients

Crispy duck pancakes as required
Hoisin sauce as required
Cucumber as required
Coriander as required
Spring onions as required
Pork loin fillets 2
Salt & pepper as required
Ginger (grated) 1 tsp
Garlic (grated) 1 tsp
Potato starch as required
Garlic chives (nira) 1 bunch
Dried shiitake mushrooms 4-5
Vegetable oil as required

Method

Cut the pork into strips and chop the garlic chives into 5cm lengths. Rehydrate the mushrooms in warm water then cut into fine strips.

Sprinkle the pork with ginger, garlic, salt & pepper then dredge with the potato starch.

Put the oil in a frying pan and fry the pork from Step 2 and the mushrooms. Fry until nice and brown.

Add the garlic chives and fry until cooked and season with salt & pepper.

In the meantime, put the pancakes into a steamer to warm.

Put the hoisin sauce into a small bowl. Cut the cucumber and spring onions into fine strips and arrange on a plate. Add the coriander to the plate.

Put Step 4 and the pancakes on the plate and take to the table.

Let your guests take a pancake, spread with some hoisin sauce and add the pork mixture, cucumber, spring onion and coriander. Simply roll up and enjoy!

Tips & Note

●There are usually 10 pancakes per pack. Don't microwave them as they will turn hard, so it's better to steam them warm
●Use ordinary shiitake mushrooms if you can't find the dried ones
