Mushroom Stuffed Oven Baked Chicken

A refreshing flavour of lemon.

Ingredients

Brown mushrooms 6-8
White wine as required
chicken breast 1
Soy sauce as required
Salt & pepper as required
Watercress or rocket as required
Vegetable oil as required
Lemon as required

Method

Slice the mushrooms diagonally and put onto a baking tray.

Add some white wine and some salt & pepper. Put into the oven for 10 minutes on Gas mark 7-8.

Put some oil in a frying pan and fry the chicken breast on both sides, seasoning with salt & pepper.

Put the chicken into the oven for 5 minutes. Remove then cut into diagonal slices when hand hot.

Sandwich the mushrooms inside the chicken slices and brush the chicken with soy sauce.

Season with salt & pepper and put back in the oven on Gas mark 7-8 for a further 5 minutes.

Mix the salad leaves with vegetable oil and salt & pepper and place on a serving dish with Step 6. Garnish with a lemon.

Tips & Note

You could also make a sesame dressing: grind 2-3 tbsp sesame seeds and mix with 2-3 tbsp sesame oil, 1 pinch cayenne pepper and a touch of water to loosen.
