Baked Herby Chicken and Courgettes

Ideal for entertaining.

Ingredients

Courgettes 2
Chicken thighs 2
White wine 1 tbsp
Olive oil 3 tbsp
Salt & pepper a little
Rosemary a little
Herby Breadcrumbs:
Breadcrumbs 4 tbsp
Garlic (finely chopped) 1 clove
Parmigiano reggiano (grated) 2 tbsp
Flat leaf parsley (finely chopped) 2 tbsp
Dried oregano 1 tsp
Dried chilli (finely chopped) a little

Method

Remove the chicken bones and pierce the skin side with a fork. Marinate with the wine, 1 tbsp olive oil and salt & pepper.

Mix all the herby breadcrumbs ingredients together in a bowl.

Drizzle some olive oil onto 2 oven trays and place 4 courgette slices (cut off the ends) flat next to each other in each tray.

Turn over the courgettes and drizzle again with olive oil.

Place the chicken onto the courgettes and sprinkle over with the herby breadcrumbs and a pinch of salt right to the edges.

Put a rosemary sprig on top and drizzle 1tbsp olive oil over the top per tray.

Preheat the oven 210C and bake for 20 minutes. When the breadcrumbs are nicely browned, it's ready.

Tips & Note

●At Steps 3 & 4, make sure to cover the courgettes liberally with the olive oil to cook evenly.
