Hot Spicy Vegetable Omelette

Dip into a seaweed sauce to enjoy it Korean style.

Ingredients

Eggs 4
Courgette (small) 1
Onion 1/2
Chinese chives (nira) (cut to 5cm lengths) 1
Salt & pepper as required
Dipping Sauce
Soy sauce 1-1.5 tbsp
Sesame oil 1 tbsp
Vinegar (optional) 1 tsp
Sugar (optional) 1 tsp
Grated garlic 1/2-1 clove
Crushed sesame seeds 1 tbsp
Spring onion 1
Gochujang 1 tsp-1 tbsp
Nori sheet 1

Method

Mix all the dipping sauce ingredients except the spring onion and nori.

Put the oil in a frying pan and fry separately on a medium heat the onion, courgettes and Chinese chives until soft.

Season each with salt & pepper and keep aside.

Crack the eggs in another bowl, beat and add salt & pepper.

Put more oil in the frying pan and return half the onions and courgetttes.

Pour in a quarter of the beaten eggs and mix with the vegetables to make a thin omelette.

Brown on both sides then remove. Repeat once more.

Use the same method as Step 7, using the Chinese chives this time. Make 2 omelettes.

Cut the omelette into 5cm squares and place on a serving dish.

Just before serving, sprinkle the crushed nori and finely chopped spring onions into the dipping sauce and serve alongside the omelette.

Tips & Note

If the dipping sauce seems too thick, just add a drop of water. You can add crushed chilli to make it hotter if you like.
