Tuna & Chickpea Burgers

Ideal for those who don't like meat, a good healthy burger!

Ingredients

Chickpeas 1 cup
Tuna (tinned) 1
Onion 1
Garlic 1 clove
Egg 1
Curry powder 1 tsp
Paprika 1/2 tsp
Flour 1-2 tbsp
Finely chopped parsley 1 tbsp
Salt & pepper as required
Vegetable oil 2 tbsp
Garnish
Tomato 1-2
Cucumber 1/3
Red onion 1
Mayonnaise 4 tbsp
Chilli sauce 2-4 tsp
Burger buns 4-6

Method

Finely chop the onion and garlic.

Put 1 tsp into a frying pan and heat. Fry the onions until brown.

Add the garlic and fry until you get a lovey aroma.

Put the cooked chickpeas into a blender with the beaten egg. Add the onions and garlic and spices and blend together.

Add the flour and tuna into Step 4 then divide the mixture into 4-6 depending to fit the buns. Make each into burger patties.

Put 1 tbsp oil in a frying pan and heat. Fry the burgers on both sides until nicely browned.

Slice the buns in half and place cut side down in the frying pan to get a nice colour.

On the base buns, spread the mayonnaise and fill with some lettuce if you like then top with a burger.

Ad the sliced tomato, cucumber and red onions on top. Add some more mayonnaise and some chilli sauce.

Cover with the top bun and serve.
