Squid Mooli (Ika Daikon)

A traditional dish that goes well with sake.

Ingredients

Squid 200g
Radish 80g
Sake 2 tbsp
Sugar 1/2 tbsp
Light soy sauce 2 tbsp
Mirin 1 tbsp
Potato starch in a bit of water 1 tbsp
Cayenne pepper as required

Method

Wash the squid lightly and pat dry. Slice into rings.

Chop off the end bit of the radish and put the rest in a blender.

Put sake, sugar, soy sauce and mirin in a small pan and bring to the boil. Add the squid.

Add the potato starch and cook for 1 minute then turn the heat off.

Place Step 4 onto a serving dish and cover over with Step 2 and cayenne pepper.

Tips & Note

●You could use wasabi instead of cayenne pepper.
