Healthy Soba Noodles with Pickled Plum & Radish

A delicious cold noodle dish to refresh you on a hot summer's day.

Ingredients

Soba noodles for 2 people
Radishes 200g
Pickled plums (umeboshi), large 2
Bonito flakes 5g
Soy sauce 3 tbsp
Mirin 2-3 tbsp
Spring onions 2 tbsp
Cress as required
Wasabi as required
Crushed sesame seeds as required
Crushed rice crackers as required

Method

Blend the radishes, pickled plums and bonito flakes and keep aside for 15 minutes.

Add the soy sauce and mirin.

Boil the soba noodles, rinse under running water and drain well.

Place the noodles onto a serving dish and garnish with the finely chopped spring onions, cress and crushed sesame seeds.

Serve alongside some crushed rice crackers if you have. Pour the dressing from Step 2 over the noodles and serve with some wasabi if you like.

Alternatively you could use deep-fried vermicelli instead of crushed rice crackers.
