Chocolate Brownies

Ingredients

Dark chocolate (cocoa 55%+) 400g
Sugar 240g
Butter 240g
Flour 130g
Eggs 4
Pecan nuts 100g
Concentrated espresso 3 tbsp
Vanilla extract as required

Method

Melt the chocolate in a bain marie with the butter.

Add the sugar a bit at a time to the beaten eggs and whisk until it triples in volume.

Pour the chocolate from Step 1 into Step 2 and stir with a large spoon folding in gently. Add the vanilla extract and espresso.

Sift in the flour and fold in gently.

Pour into an oven tray lined with greaseproof paper and push in the pecan nuts on the top (keep them visible). Bake at 180C for 20-25 minutes.

Remove and allow to cool down, then remove from the tray and wait until completely cold before serving.

Tips & Note

【Preparation】
●Allow the butter to reach room temperature and dice to 1cm. Make very strong coffee and cool it down. Line the oven dish with greaseproof paper.
●If you do Step 2 in a bain marie, this will speed up the process.
