Cucumber Soup

This tastes delicious cool and poured onto hot rice.

Ingredients

Cucumber 1
Prawns 50g
Dashi stock 300ml
Potato starch or cornflour 1 tbsp
Salt 1 tsp
Sake 1 tbsp
Egg 1
Spring onion 1

Method

Peel the cucumber, and cut into dice. Chop the prawns.

Boil the dashi in a saucepan and season to taste with the sake and salt. Add the cucumber and prawns and cook for 10 minutes.

Add 2 tbsp of water to the pan. Slacken the potato starch with a bit of water, then add to the pan and stir until it thickens. Add the beaten egg and stir well.

Pour into a bowl and sprinkle over with the finely sliced spring onion. It's ready!

Tips & Note

You can use the leftover cucumber skin for another recipe such as Bang Bang Chicken.
When adding the beaten egg, turn the heat off and don't overcook it.
