Cured Ham & Mozzarella Sushi with Basil

Japan meets Italy...a super tasting sushi made with the addition of basil leaves.

Ingredients

Cooked rice 400g
Sushi vinegar 75ml
Bonito flakes 10g
Soy sauce 1 tbsp
Mozzarella cheese 125g
Prosciuto 80g
Basil leaves 10g

Method

Here are the ingredients (they don't look like they're for sushi!)

Add sushi vinegar to the cooked rice and allot to cool. Add the finely chopped basil and prosciuto to the rice.

In another bowl, mix the bonito flakes and soy sauce.

Dice the mozzarella cheese to 2cm square. and take out 6 pieces for the garnish.

In a serving bowl or cup, put half of the rice and add the mozzarella and half of Step 3. Top with the remaining rice to cover and garnish with the mozzarella pieces kept aside. Pour on the rest of Step 3.

Tips & Note

The bonito flakes in the soy sauce add a wonderful flavour so don't miss this out.
