BLT Yorkshire Pudding

Perfect for a relaxing brunch!

Ingredients

Flour 60g
Salt 1/8 tsp
Egg 1
Milk 60ml
Vegetable oil 2 tbsp
Bacon rashers 6
Tomato 1
Lettuce leaves 4

Method

Preheat the oven 220C.

Sieve the flour and salt together in a bowl. Break in the egg and mix well with a whisk.

Add the milk little by little to make a smooth batter and leave at room temperature for about 30 minutes.

Cut the bacon into a bitesize pieces.

Put 1 tbsp oil each into two skillets and heat well in the oven.

Pour half the batter into each skillet and flatten. Scatter the bacon on top and bake for 25 minutes in the oven (lower the temperature to 200C).

Remove from the oven and top with the sliced tomatoes and lettuce before serving.

Tips & Note

● You'll need a lot of strength at Steps 2 & 3 to mix the batter, but spend some time at this stage and you'll have a nice smooth mixture
