Pickled Beetroot Maki Sushi Roll

Ingredients

Sushi rice 100g
Nori sheet 1/2
Pickled beetroot 1 tbsp
Leaf spinach 4
Cucumber 1cm square batons

Method

Cover the bamboo mat with cling film. Place the nori sheet on top and spread with 100g sushi rice, leaving 2cm free at the top.

Lay the spinach leaves on top of the rice, then place the beetroot strips/slices and cucumber batons on top.

Lift the nori with the bamboo mat from your side and roll over to cover half the ingredients. Keep rolling.

Press down firmly and evenly with the bamboo mat. Cut into slices with a wet knife, it's ready to serve with soy sauce, if you like.
