Scrambled Tofu

Ideal for a picnic or lunchbox.

Ingredients

Tofu (medium firm) 1/2
Carrot 1
Onion (medium) 1
Egg 1
Sesame oil 1 tbsp
Crushed sesame seeds 1 tsp
Seasonings:
Mirin 2-3 tsp
Sugar 1 tsp
Soy sauce 2 tbsp
Sake 1 tbsp
Mayonnaise 1 tbsp
Pepper as required
Spring onions 2

Method

Cut the carrot and onion into 5mm dice and remove excess water from the tofu by wrapping in kitchen paper and weighing down.

Put the sesame oil in a frying pan and fry the onions and carrots on low heat.

When the onion is translucent, add the ripped tofu and stir in using a wooden spoon or chopstick.

Add all the seasonings from mirin to sake and stir well.

Add the beaten egg and cook until the moisture has reduced.

Turn the heat off and allow to cool. Season with mayonnaise, crushed sesame seeds and pepper.

Sprinkle over finely chopped spring onions before serving.

Tips & Note

●Be patient and stir the mixture well to remove the moisture
●This is a vegetarian version but you can add minced chicken or pork if you like
●You can make a lovely sandwich with this as a filling
