Aubergine Stir Fried with Miso, Italian Style

Chinese chilli bean sauce and cheese is a great combination with this dish.

Ingredients

Aubergine 300g
Garlic 1 clove
Ginger 1 thumb
Onion (small) 1
Olive oil as required
Miso 1.5 tbsp
Tomato puree 1 tbsp
Chinese chilli bean sauce 2/3 tsp
Cheddar cheese as required
Black pepper as required
Sea salt a pinch

Method

Chop the aubergine to bitesize pieces. Finely chop the onion, garlic and ginger.

Stir fry the onions on a low heat in a frying pan with lots of olive oil.

When the onion becomes translucent, add the aubergine pieces, garlic and ginger and stir on a medium heat.

Mix together the miso, tomato puree and the Chinese chilli bean sauce and add to Step 3. Adjust to taste.

Turn the heat off and add the cheese, it's ready to serve.
