Ingredients

Cucumber 5cm
Takuan (pickled mooli) 3 cm
Umeboshi 1
Mayonnaise 3 tbsp
Chilli powder if you like

Method

Slice the cucumber 2mm thick and then into half moons. Squeeze well to remove the water.

Slice the mooli 3mm thick and then into half moons. Put in a bowl with the cucumber.

Remove the umeboshi stone and finely chop the umeboshi into the bowl and mix.

If you can, leave for 10 minutes. You can eat it with chilli pepper on top when it's ready.

Tips & Note

The very sour umeboshi goes particularly well in this recipe.
It's also a great dish to have with sake.
