Sweet and sour vinegared cucumber, wakame seaweed and surimi

Ingredients

Cucumber 5cm
Dried wakame seaweed 1 tbsp
Surimi (crabsticks) 2
Salt 1/2 tsp
Sugar 2 tbsp
Vinegar 3 tbsp
Soy sauce (light) 1/2 tsp
Sesame seeds optional

Method

Thinly slice the cucumber, sprinkle with 1/2 teaspoon of salt, squeeze by hand and drain it.

Rehydrate the dried seaweed with plenty of water. Cut the surimi sticks to a suitable size. Here, I cut it in quarter lengths.

Put the sugar, vinegar and soy sauce in a bowl and mix well to dissolve the sugar.

Put the cucumber, wakame seaweed and surimi in the sauce and stir well.

Sprinkle with white sesame seeds if you like. You can enjoy a different taste by adding a little shredded ginger.
