Sweet & Sour Pickled Cucumber & Wakame

Ingredients

Cucumber 10cm
Wakame seaweed (dried) 1 tsp
Salt 1 heaped tsp
Rice vinegar 3 tbsp
Sugar 2 level tbsp
Ginger 50p size
Sesame seeds as you like

Method

Mix the vinegar and sugar together well in a bowl until the sugar dissolves.

Finely slice the cucumber and sprinkle with the salt. Rub in and keep aside for 10 minutes. Rehydrate the dried wakame seaweed in water.

Rinse the cucumber under running water to remove the salt and squeeze tightly. Squeeze the wakame and put in a bowl with the cucumber. Add the fine strips of ginger.

Pour the pickling liquid from Step 1 and mix well. It's ready. Transfer to a serving dish and arrange attractively, sprinkling with the sesame seeds.
