Cucumber With A Ponzu Dressing

Ingredients

Cucumber 100g
Egg 1
Ponzu soy sauce 1 tbsp
Shiso (or spring onion) 2 leaves (or 1/2)
Cherry tomato for the garnish 1

Method

Cut the cucumber into half and score it to absorb the dressing.

Place chunks of the boiled egg in a bowl, add the cucumber, ponzu soy sauce and finely chopped shiso or spring onion. Mix well.

Pick out the cucumber from the bowl onto a dish, then place the egg on top. Garnish with the cherry tomato.
