Spring Greens & Natto Fried Rice

Good for a light bite or a bento lunchbox.

Ingredients

Pickled young spring greens 1-1.5 bulbs
Natto 100g
Egg 1
Ginger 1/2 thumb
Cooked rice 500g
Soy sauce 1 tbsp
Spring onions 1-2
Bonito flakes if you like 1 handful

Method

I recommend the young spring greens from Waitrose which has quite soft fibres.

Make the pickle first.

Chop the spring greens and sprinkle liberally with salt and leave for half a day.

Rub the salt into the greens, then squeeze and put into a sealing bag.

Add fine strips of 1 thumb ginger, 1.5 tbsp light brown sugar and 2 tbsp rice vinegar and mix well.

Remove the air from the bag and seal. Leave for 1-2 days.

Now make the fried rice and natto

納豆をしょうゆ小さじ1、みりん小さじ0.5と混ぜておく(付属のたれがある場合はそれを使用)。

卵は塩コショウ少々で溶いておく。ご飯は少し硬めに炊き、皿に広げ、蒸気をしっかり逃がしておく。

中華鍋を火にかけ、熱くなったらオイル少々を注ぎ、溶き卵を入れ、ふんわり炒り卵を作っていったん取り出す。

中華鍋にオイルを少し足し、みじん切りにしたしょうがを入れ、香りがたったらご飯を加えてよく炒める。

納豆や浅漬け、炒り卵を入れて混ぜ炒め、鍋肌にしょうゆをたらして全体に行き渡らせる。

最後に小口切りにしたスプリングオニオンを散らし、お好みでかつお削り節をのせたら出来上がり。
