Mediterranean Vegetable Curry

A speedy curry using Tesco's frozen Mediterranean vegetables.

Ingredients

Mediterranean vegetables (Tesco) 200g
Knorr chicken stock 1 tbsp
Japanese curry roux (paste) 2 cubes
Hot water 200ml

Method

I used this Tesco frozen pack of Mediterranean vegetables, it has courgettes and peppers, and tastes really nice if you add cherry tomatoes.

I used Knorr chicken stock cube.

Put the Japanese curry roux in a frying pan and cook on low heat until it melts down.

Add in the vegetables and mix into the sauce.

You can eat this with rice to get a lovely authentic Japanese curry!

Tips & Note

This dish can be ready in five minutes, so it's an ideal dish to make when you come home late - quicker than a ready meal.
