Stir Fried Vermicelli with Oyster Sauce

Sweet vermicelli noodle for all the family.

Ingredients

Vermicelli 100g
Minced pork 180g
Onion 1/2
Green pepper 1/4
Yellow pepper 1/4
Red pepper 1/4
【Seasoning】
Salt & pepper a little
Light soy sauce 2 tbsp
Mirin 2 tbsp
Miso (red) 1 tbsp
Chinese chilli bean sauce 1 tsp
White wine 5 tbsp
Chicken stock powder 1 tbsp
Oyster sauce 2 tbsp
Sesame oil 1 tsp

Method

Rehydrate the vermicelli in a bowl of hot water for 4 minutes (keep it al dente).

Soak in cold water to cool, then drain well to prevent it absorbing more water.

Chop all the vegetables into bitesize pieces.

Put the vegetable oil in a large frying pan on high heat.

Add the minced pork and season with salt & pepper. Stir fry and add the vegetables when it's browned.

When the vegetables are softened, add the vermicelli and all the 【Seasoning】ingredients.

Stir fry everything for 2-3 minutes. When there's no moisture, it's ready to serve.

Tips & Note

If any moisture remains, the texture is not that good, so allow to cook off on a high heat.
