Sweet & Spicy Chicken Liver Sandwich

Cooked in red wine and butter, the secret ingredient is the miso!

Ingredients

Chicken livers 380g
Onion (large) 1
Butter 1 tsp
Red wine 5-8 tbsp
Honey 1 tbsp
Golden syrup 1 tbsp
Light soy sauce 3 tbsp
Mirin 1 tbsp
Miso (red) 1 tbsp
Baguette 1
Mayonnaise if you like
Lettuce leaves as you like

Method

Put the livers in a bowl with some water to remove any blood.

Drain and pat dry and cut to bitesize pieces. Cook in boiling water for 4-5 minutes before draining.

Put the butter in a large frying pan and fry the finely sliced onions on medium heat. Add the liver and fry.

Add all the seasoning ingredients and fry. Add the red wine a bit at a time and reduce all the sauce completely.

Score and remove a section of baguette. Spread with some mayonnaise and add the lettuce. Fill with the onions from Step 4 first, then the liver on top.

Tips & Note

●You could spread tartare sauce instead of mayonnaise if you like.
