Deep Fried Spicy Chicken Wings

Coating in cornflour will give a crispy and juicy chicken - enjoy with a cold beer!

Ingredients

Chicken wings 11-12
Cornflour 60g
Oil for frying as required
Chinese chilli bean sauce 1/2 tbsp
Soy sauce 1 tbsp
Oyster sauce 1 tbsp
Cayenne pepper 1 tsp
Sake or white wine 1 tbsp

Method

Put the chicken wings in a bowl with all the seasoning ingredients and rub in. Keep for 20 minutes.

Dredge evenly with the cornflour.

It will look like this.

Deep fry the chicken wings on high heat (180C) in oil. When the outside firms up, turn the heat down and fry for 5 minutes. Turn the heat up in the last minute to crisp up the outside.

I used this cornflour available in the baking section of supermarkets. You could use potato starch if you have it.

Tips & Note

Once you put the chicken into the oil, don't touch it until the outside firms up, then you can turn them over.
