Chicken wings | 11-12 |
Cornflour | 60g |
Oil for frying | as required |
Chinese chilli bean sauce | 1/2 tbsp |
Soy sauce | 1 tbsp |
Oyster sauce | 1 tbsp |
Cayenne pepper | 1 tsp |
Sake or white wine | 1 tbsp |
Once you put the chicken into the oil, don't touch it until the outside firms up, then you can turn them over.
