Egg Mayo & BLT Double Sandwich Roll

Egg mayo or BLT - difficult choice...so go for both!

Ingredients

Bread rolls 2
Egg 1
Bacon rashers 2
Salt & pepper as required
Tomato 1/4
Lettuce leaf 1
Mayonnaise as required

Method

Make two hollows per bread roll, as shown, leaving a wall of bread between the two.

Fry the bacon until crispy. Finely chop 1/3 of the bacon and roughly chop the remaining 2/3.

Make a hard boiled egg. Chop the egg in a bowl and add the finely chopped bacon from Step 2, 2 tbs mayonnaise and salt & pepper. Mix well - the egg mayo is ready.

Tear the lettuce into shreds and slice the tomato into 1cm half moons.

Fill one hollow with the roughly chopped bacon, lettuce and tomato. Add 1 tsp mayonnaise. In the other hollow, add some lettuce and top with the egg mayo.

It's ready to enjoy - eat your favourite side first!

You could make a double sandwich with a lid! Use prawn mayonnaise and roast chicken in each half, see the recipe here.

Or with smoked salmon on one side and smoked mackerel on the other!

Tips & Note

You can use any combination of stuffings - prawn mayonnaise, avocado, coleslaw, Coronation chicken...The hollowed out bread can be eaten as it is or with jam and butter. If it dries out, use them as breadcrumbs.
