Avocado Pintxos

Avocado and solid yogurt makes a great topping.

Serves 6-8

Ingredients

Organic yogurt 500ml
Avocado 1
Cherry tomatoes 3-4
Baguette slices (1cm thick) 2
Honey 3 tbsp
Honey (for drizzling) as required

Method

Make the solid yogurt, see recipe ID: 1924

Put the avocado and solid yogurt in a bowl and mash together.

Finely chop the cherry tomatoes and add to Step 2 with the honey and mix well.

Cut the baguette into bitesize chunks and top lavishly with Step 3. Drizzle over with as much honey as you like. You can serve with cocktail sticks.

I used this Yeo Valley yogurt to get a good solid yogurt.
