Thick Aubergine Soup

This is a dish full of the taste of aubergine.

Ingredients

Aubergine 1
Dashi broth 400ml
Miso 1 tbsp
Crushed sesame seeds 1 tbsp
Pumpkin 1/3
Okra & green beans as required
Vegetable oil as required

Method

Pierce the aubergine with a fork and roast in a hot oven 200C for 1 hour.

Remove from the oven and allow to cool and peel off the skin.

Put into a food processor and blend.

Put Step 3 into a pan and add the dashi broth. Add the miso and crushed sesame seeds.

Heat the oil in a pan and lightly fry the pumpkin and okra.

Put Step 5 on a dish and pour over Step 4, it's ready to serve.
