Asparagus And White Fish Bake

Ingredients

Asparagus 1-2 bunches
Anchovy fillets 3
Garlic 1 clove
White fish fillets 4
Cured ham slices 4
Lemon slices 4
Red wine vinegar 2-3 tbsp
Olive oil 4 tbsp
Salt & pepper as required
Rosemary 1 sprig

Method

Lay a slice of cured ham on a piece of cooking string then place the asparagus.

Put the white fish fillet in the middle of the asparagus, with finely chopped anchovy and garlic on top.

Fold the ham slice over and loosely tie the string. Slide in a slice of lemon under the knot and fasten the string tightly. Repeat another 3 times.

Stir together the red wine vinegar, olive oil and salt & pepper well in a bowl.

Pour some of Step 4 onto a plate before place the parcels on top. Cover with the remaining sauce and sprinkle rosemary over the top.

Bake in a preheated oven 230C for 15 minutes.

Tips & Note

●You can use bacon instead of cured ham if you prefer.
