Ingredients

Filo pastry sheets 3
Onion 1/2
Mushrooms 5-6
Anchovy fillets 4-5
Parmigiano reggiano as required
Olive oil as required

Method

Because the filo pastry is too large to fit on the oven tray, cut the three sheets into half to make 6 sheets.

Brush with the olive oil and sprinkle with some Parmesan (about 1 tsp) and layer with the next filo. Repeat five times.

Place the sliced mushrooms and onions evenly on the top layer then dot with the chopped anchovies evenly.

Put in a preheated oven 200 °C (400℉, gas mark 6) and bake for 20 minutes. Enjoy it warm and crisp.
