Skate Meuniere

Ingredients

Skate wings 2
Cherry tomatoes 12
Capers 2 tbsp
Finely chopped parsley 3 tbsp
Olive oil 2 tbsp
Butter 2 tbsp
Garlic 1 clove
Anchovy fillets 2
Salt & pepper as required
Flour 2 tbsp

Method

Chop the cherry tomatoes into half. Roughly chop the capers, parsley and anchovies. Slice the garlic.

Pat dry the excess moisture from the skate, season with salt & pepper and dredge with flour.

Put the olive oil into a frying pan and add one skate wing and cook for 3 minutes until browned. Turn over and fry another 2 minutes.

Repeat with the other skate.

Keep the skate wings aside. Put the butter, garlic and anchovies into the same frying pan. Add the tomatoes and capers and fry for 3 minutes on low heat.

Add the parsley, then pour the whole sauce over the skate. It's ready to serve.

Tips & Note

You can use this recipe for cod or seabass.
