Pan Fried Potato Wedges with Mussels

Add tinned mussels into your favourite potato wedges, it's delicious!

Ingredients

Potatoes 300g
Olive oil 2 tbsp
Smoked mussels tin 1
Salt (for boiling) as required
Sea Salt 3 pinches
Black pepper a pinch
Garlic 1 clove
Dried chilli 1
Parsley as you like

Method

Cut the potatoes into wedges and boil in salted water for 7-8 minutes until cooked.

Drain and fry in a frying pan with the olive oil on medium heat.

When browned, turn the heat to low and add the finely chopped garlic, deseeded chilli cut into pieces and the tinned mussels.

Season with salt & pepper and transfer to a serving dish. Sprinkle finely chopped parsley and serve.

This is the smoked mussels tin I used, there are 12-13 mussels per tin.

Tips & Note

●You would probably use anchovies but I really wanted to try with the mussels. You'll need salt in this case, as anchovies are salty in themselves but the mussels are not
