Eddoe Potato and Carrot Miso Soup

Eddoes are closely related to the taro potato. It's an ideal potato for miso soup to warm you up.

Ingredients

Eddoes 2
Carrot (medium) 1
Onion 1/4
Spring onion 1/3
Hot water 600ml
Dashi stock granules or fish stock 1/2 tsp
Miso (red or mixed) 35-40g

Method

These are the loose eddoes that I bought at Tesco. It's practically the same as a taro.

Boil the hot water in a pan and add the dashi stock. Add the chopped eddoes, carrots and sliced onions and boil for 5 minutes.

When the root vegetables have softened, turn the fire down to medium and add the miso dissolved in a bit of water. Sprinkle with the finely chopped spring onion and serve.
