Stir Fried Beef and Okra with Chilli Bean Sauce

Okra goes well with a spicy sauce.

Ingredients

Steak beef 200g
Okra 12-14
Onion 1/2
Spring onions 2
Garlic 1 clove
Soy sauce 1 tsp
Rice wine (sake) 1 tsp
Cornflour (or potato starch) 1 tbsp (or 1 tsp)
Sesame oil 1 tsp
Vegetable oil 2 tbsp
Chinese chilli bean sauce (Tobanjan) 1/2 tbsp
Sugar 1 tbsp
Soy sauce 1 tbsp
Sake 1 tbsp
Sesame oil 1 tsp

Method

Shred the beef and mix well with the grated garlic, soy sauce, rice wine, cornflour and sesame oil by hand and rub in well. Cut the okra in two diagonally.

Put 1 tbsp vegetable oil in a frying pan and heat on high. Add the beef and fry for 3-4 minutes until 80% cooked then remove to a plate.

Add 1 tbsp more oil to the same frying pan and heat. Add the okra and fry for 1 minute then add the sliced onions. When the vegetables have softened, add the chilli bean sauce.

Stir fry for 1 minute, coating the vegetables with the chilli bean sauce. Add the roughly cut spring onions and lightly stir fry. Add the sugar, soy sauce and rice wine and mix well.

Return the beef from Step 2 to the pan and fry for 1 minute. Drizzle sesame oil over the top and transfer to a serving dish.

Tips & Note

If you like very hot food, add more more chilli bean sauce, but the responsibility will be yours!!
