Ingredients

Lettuce 1/2
Eggs 2
Chicken stock granules 2 tbsp
Mirin 1 tbsp
Salt a pinch
Sesame oil 2 tbsp
Chinese chilli bean sauce (Toban-jan) 1 tbsp
Oyster sauce 1 tbsp

Method

Put the chicken stock, mirin, salt and eggs in a bowl and mix. Put 1 tbsp sesame oil into a frying pan and add the beaten eggs mixture and make half-cooked scrambled eggs on high heat.

Remove the scrambled eggs to a dish and add another tbsp sesame oil to the same frying pan. Add the chilli bean sauce, oyster sauce and sugar and fry for 30 seconds.

Add large shreds of lettuce and stir fry together for 1 minute. Return the scrambled eggs to the pan and stir fry with the lettuce for 1 minute on high heat.

Check the taste, adding more oyster sauce or chilli bean sauce as you like, then transfer to a serving dish.
