Omelette Swirl on Rice

I tried to make this recipe for a dish I saw in a Saitama restaurant 'Benitei', it was a good challenge. Kids will love this!

Ingredients

【Sauce】
Heinz oxtail soup tin 1
Onion 1/2
Mushrooms 4
Tonkatsu sauce (or brown sauce) 1 tbsp
Ketchup 1 tsp
Soy sauce 1 tsp
Water 2 tbsp
Salt & pepper as required
【Omelette】
Eggs 5
Salt 2 pinches
Butter 1 tsp x 2
【Rice】
As you like

Method

Put some vegetable oil in a frying pan and fry finely chopped onion and mushrooms.

Add the oxtail soup, ketchup, brown sauce, soy sauce, salt & pepper and water. Bring to the boil on high heat, then reduce to a simmer for 5-7 minutes.

Turn the heat off and allow the flavours to absorb.

Make your favourite fried rice with chicken, pork, beef or vegetables, for example. I made special fried rice.

Crack the eggs in a bowl, add the salt and whisk well. Leave aside until the bubbles disappear.

This dish is for 2 people so make 2 omelettes:

Heat a medium sized frying pan on high heat. Add 1 tsp butter and half the beaten egg in one go.

After 10 seconds, use long chopsticks to drag the egg from the top to the centre.

Then drag from the bottom to the centre.

Leave a gap of 2-3cm in the centre and slowly turn the frying pan round almost all the way to create a swirl in the omelette.

Be careful not to break the omelette. Transfer it onto your mound of rice when the omelette is almost fully cooked.

Garnish with cherry tomatoes and celery. Pour some sauce from Step alongside and serve.

Tips & Note

●You'll need to perfect the technique so the first attempt may not be that good, but once you have a go, you'll soon get a good swirl.
●You can use curry sauce or tomato sauce, whatever you like.
