Spicy Stir Fried Butternut Squash and Minced Beef Kinpira

A lovely crunchy texture.

Ingredients

Butternut squash 1/2 (420g)
Minced beef 100g
Vegetable oil 1.5 tbsp
Ginger 1 thumb
Spring onions 2
Seasonings:
Soy sauce 3 tbsp
Sake 3 tbsp
Sugar 1 tbsp

Method

Cut the squash into half and deseed. Peel and cut into strips.

Finely chop the ginger and roughly chop the spring onions.

Put the oil in a frying pan and add the minced beef and fry on high heat until browned and separate.

Add the squash and soy sauce and fry further.

Put the seasoning ingredients together in a bowl and add to the frying pan. Stir until reduced.

Add the spring onions and mix lightly before transferring to a serving dish.

Tips & Note

●Of course, you can use minced chicken or pork instead of beef.
