Stylish Wagyu Cake Benihana Special

Ingredients

Beef slices (preferably wagyu beef) 25g
Tiger prawn 1
Egg 1
Asparagus 1
Sugar 5g
Garlic rice:
Cooked rice 150g
Carrot 20g
Onion 20g
Garlic 1/2 clove
Shiso herbs (perilla) 1
Tallow (preferably of wagyu beef) 20g
Salt & pepper as required
Soy sauce 3 tbsp
Sesame seeds 5g
BBQ sauce:
Soy sauce 250ml
Mirin 150ml
Sugar 150ml
Vinegar 15ml
Garlic (grated) 10g
Honey 50ml
Sesame oil 50ml

Method

Finely chop the carrots, onions and garlic and shred the shiso. Remove the vein from the prawn and cut a slit down the back. Boil all the BBQ sauce ingredients (from soy sauce to honey) in a pan, allow to cool, then add the sesame oil.

Put the beef tallow in a heated pan and fry until the colour changes. Add the carrots, onions and garlic and and fry until cooked through. Add the rice.

Season with salt & pepper and add the soy sauce and sesame seeds. Stir fry, then add the shiso. Fill into moulds to create a neat shape. You could use a teacup (but in this case, place the scrambled egg at the bottom).

Mix the beaten egg with the sugar and make a scrambled egg. Place on top of the rice in the mould, pressing down slightly to fix the shape, then remove the mould.

Place 3 thin slices of beef lengthways, just overlapping, to make a long thin strip.

Then roll it up to make a rose shape.

Sauté the asparagus and prawn in a hot frying pan and sprinkle with salt & pepper. Fry the beef rose but only the base, it's very important.

Serve the garlic rice with a garnish of the asparagus, prawn and beef rose on top. Pour over the BBQ sauce. It would be fun to put a candle on top to celebrate a special day such as a birthday!

Tips & Note

· If you don't have any asparagus, you can still create lovely colouring using green peppers
· Charring the beef on the outside and keeping the inside still red (maillard phenomenon) will dramatically increase the umami of this dish!
· Why not celebrate something special with this dish ♪
· Wagyu beef (sliced, beef tallow etc.) can be purchased at Benihana.
